Lion's Mane Orange Chicken with Rice and Broccoli

Ingredients:

For the Lion’s Mane Chicken:

  • 2 cups Lion's Mane mushrooms, cleaned and torn into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup water
  • 1/2 cup orange juice
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • Oil for frying

For the Rice and Broccoli:

  • 1 cup jasmine rice
  • 2 cups water
  • 2 cups broccoli florets
  • Salt and pepper to taste

Instructions:

  1. Prepare the Rice:

    • Rinse the jasmine rice under cold water until the water runs clear.
    • In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed and the rice is tender. Remove from heat and let it sit covered for 10 minutes.
  2. Prepare the Broccoli:

    • While the rice is cooking, steam the broccoli florets until tender but still bright green, about 5-7 minutes. Season with salt and pepper to taste and set aside.
  3. Prepare the Lion’s Mane Mushrooms:

    • In a bowl, combine the flour, cornstarch, baking powder, and salt. Gradually whisk in the water until a smooth batter forms.
    • Heat oil in a deep skillet or fryer to 350°F (175°C). Dip the mushroom pieces into the batter, allowing any excess to drip off, then carefully place them in the hot oil. Fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.
  4. Prepare the Orange Sauce:

    • In a small saucepan, combine the orange juice, soy sauce, rice vinegar, brown sugar, ginger, garlic, and red pepper flakes. Bring to a simmer over medium heat.
    • Stir in the cornstarch slurry and cook until the sauce thickens, about 1-2 minutes.
  5. Combine and Serve:

    • Toss the fried Lion's Mane mushrooms in the orange sauce until well coated.
    • Serve the orange mushrooms over the steamed rice, with broccoli on the side. Garnish with sliced green onions or sesame seeds if desired.
