Ingredients:
For the Lion's Mane Mushroom Burger:
- 2 large Lion's Mane mushrooms, cleaned and sliced into 2.5 cm thick rounds
- Olive oil
- Soy sauce or tamari
- 5 grams smoked paprika
- 5 grams garlic powder
- Salt and pepper to taste
- 4 burger buns
- Lettuce leaves
- Sliced tomatoes
- 1 ripe avocado, chopped
For the Sour Cream and Chive Sauce:
- 120 grams sour cream
- 2 tablespoons fresh chives, finely chopped
- 5ml lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste

Prepare the Sour Cream and Chive Sauce:
- In a small bowl, mix together the sour cream, chopped chives, lemon juice, and minced garlic.
- Season with salt and pepper to taste.
- Cover and refrigerate until ready to use.

Prepare the Lion's Mane Mushrooms:
- In a bowl, whisk together the olive oil, soy sauce, smoked paprika, garlic powder, salt, and pepper.
- Toss the Lion's Mane mushroom slices in the marinade, ensuring they are well coated.
- Let the mushrooms marinate for at least 15 minutes.

Cook the Mushrooms:
- Heat a skillet over medium heat. Once hot, add the marinated mushroom slices.
- Cook for about 3-4 minutes on each side, until they are golden brown and tender. The mushrooms should have a meaty texture.

Assemble the Burger:
- Toast the burger buns if desired.
- Spread a generous amount of the sour cream and chive sauce on the bottom half of each bun.
- Place a few lettuce leaves on the sauce, followed by a slice of cooked Lion's Mane mushroom.
- Add sliced tomatoes and chopped avocado on top.
- Spread more of the sauce on the top half of the bun before closing the burger.
